Ingredients:
- 55g cocoa powder
- 50ml boiling water
- 85g unsalted butter/margarine, melted
- 225g caster sugar
- 1 egg
- 1/2 tsp vanilla essence
- 100g plain flour
- 1/4 tsp baking powder
- 100g chocolate chips
Simple Steps:
- Pre-heat the oven to 180°C and line a 20cm (8") square cake tin.
- Mix together the cocoa powder and boiling water then add half the melted butter.
- Add the rest of the butter, sugar, egg and vanilla and mix.
- Sieve in the flour and baking powder and mix.
- Stir in the chocolate chips.
- Pour into the baking tin and bake in the oven for 25 minutes or until the top is firm to touch.
- Cut into squares and leave to cool in the tin.
- Mix it up by using a combination of white, milk and dark chocolate chips.
- If you haven't got chocolate chips, cut up bits of a chocolate bar works just as well and is also a cheaper alternative.
